Pistachio Truffles

These fancy, super bites of deliciousness are no bake and easy to make. These are the detailed steps to make them:
Mix pistachios’ and graham crackers’ crumbs together.

Add in syrup and mix to combine.

Add in peanut butter 1 spoon at the time. It’s imperative to mix with hands thatย makes it easy to know how much peanut butter needed. The dough should be pliable and non sticky.

Shape into walnut size balls.

Let chill in the fridge for 10 minutes. In meanwhile, melt the almond bark in a double boiler or microwave.

Dip pistachio balls in melted almond bark.

Place them in a plate covered with parchment paper.

Sprinkle the top with ground pistachios.

Let chill in the fridge for 15 minutes minimumย or until almond bark set.

  • 1 cup finely ground graham crackers
  • 1 cup ground raw unsalted pistachios (shelled) plus extra for garnish
  • ยผ cup pumpkin spice syrup
  • 1 to 3 tbsp creamy peanut butter
  • 6 oz vanilla almond bark

Instructions

These fancy no bake truffles are very easy to make, they require very few ingredients and can be ready in no time but it is preferable to let them chill to keep their forms

  1.  In a bowl mix ground pistachios and graham crackers.
  2. Pour in syrup and mix to combine.
  3. Add in peanut butter 1 spoon at the time. It's imperative to mix with hands. It makes it easy to know how much peanut butter needed. The dough should be pliable and non sticky.

Note
– Use a food processor to blend the graham crackers until they are fine crumbs. Do the same for raw pistachios (I used medium crumbs for the pistachios).
– You can reduce the amount of syrup and increase the amount of peanut butter if you prefer.
– The syrup does not have to be pumpkin spice, you can use syrup of your choice.
– These truffles should be stored in the fridge.

Nilla Wafers Mummies ๐Ÿ‡บ๐Ÿ‡ธ

These mummies (Nilla wafers)ย are easy to make and can be a great activity for kids.You can use eyeballs or simply replace them with red food coloring by soaking the end of a Q-tip in red food coloring to make dots (eyes), but would you dare and eat them!

Ingredients

  • 12 Mini Nilla wafers
  • 24 eyeballs
  • 6 oz vanilla almond bark
  • Red food coloring (optional)

Instructions

  1. Melt almond bark in a double boiler or microwave.
  2. Dip the top of mini wafers in melted almond bark.
  3. Shake off excess almond bark.
  4.  Let them cool in the fridge for 5 minutes.
  5. Put extra melted almond bark in a piping bag with a very small opening.
  6. Drizzle melted almond bark over the coated mini wafers to get the mummy wrap look.
  7. Place 2 eyeballs in each mummy wafer.
  8.  Refrigerate to allow almond bark to set.
  9. Once almond bark set, dip your finger in a red food coloring and make the mummies look spookier (optional) by staining them with the red food coloring.
  10.  Serve.
