Oven Baked Seasoned Fries

These are excellent seasoned oven baked fries. I added my choice of spices to the cut potatoes and brushed them with vegetable oil. I baked them at 400ยฐF for about 1 hour (for my oven). The result was just beyond Excellent!

Ingredients

  • 5 medium to large potatoes
  • 1 tsp salt
  • 1 tsp ginger powder
  • 1/2 tsp turmeric powder
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp oregano
  • 1/4 cup vegetable or canola oil plus more for brushing

Instructions

  1. Peel the potatoes.

  2. Wash and dry them.

  3. Cut the potatoes into wedges or into fries shape.

  4. Place the cut potatoes in a bowl.

  5. Add salt, ginger, turmeric, paprika, garlic powder and oil.

  6. Mix everything together by hands.

  7. Place single layered in a large baking dish lined with parchment paper( for easy cleanup).

  8. Bake in a 400ยฐF preheated oven for about 1 hour(it took me 1 hour to bake the potatoes, but depending on your oven, it may take less time to cook.

  9. Check on the potatoes from time to time.

  10. Half way through cooking, brush the potatoes with oil and flip them over, brush the top.

  11. Place the potatoes under the broiler (on high) in the last 10 minutes of cooking. Make sure to be around and check on them.

Recipe Notes

  • You can add chili powder for some heat.
  • You can add your favorite seasoning.

I am sharing today an excellent vegetarian recipe for Cherchem dish with a red sauce. Obviously, you can prepare this dish with meat or chicken.

Ingredients

  • 1/2 cup whole wheat, soaked for 48 hours in water
  • 1/2 cup dried Fava beans, soaked for 48 hours in water
  • 1/2 cup chickpeas, soaked overnight and rinsed.
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp chopped parsley plus more for serving
  • 1 tbsp chopped cilantro plus more for serving
  • 1 bay leaf
  • 1 medium tomato, grated
  • 1 tbsp tomato paste
  • 1 tbsp paprika
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper
  • 1/2 tsp ginger powder
  • 1/4 tsp turmeric
  • 1/2 tsp Ras Al Hanout
  • 1/4 tsp cumin
  • 1/4 tsp coriander powder
  • 2 tbsp olive oil
  • About 3 chili peppers or any other type of hot peppers.

Instructions

  1. Soak the whole wheat for 48 hours in water. Make sure to change water after 24 hours.

  2. Soak the Fava beans for 48 hours in water. Make sure to change water after 24 hours.

  3. Soak the chickpeas overnight then rinse.

  4. Put olive oil in a saucepan over medium heat.

  5. Add the chopped onion and minced garlic.

  6. Add salt, pepper, ginger, turmeric, cumin, coriander powder, paprika,Ras Al Hanout then stir for about a minute.

  7. Mix in the tomato paste and add grated tomato, parsley, cilantro and the bay leaf. Let cook for about 2 minutes, stirring constantly.

  8. Add the rinsed whole wheat and Fava beans.

  9. Pour in boiled water to cover everything.

  10. Bring to a boil then reduce the heat to low and let cook covered for about 45 minutes.

  11. In meanwhile, cook the chickpeas in a slightly salted water for about 30 minutes or until fully cooked. Set aside.

  12. Once the whole wheat and Fava beans are cooked, add the cooked chickpeas with its water.

  13. Add chili peppers if you like.

  14. Adjust the seasoning and let cook for about 5 minutes. The sauce should be reduced at this point.

  15. Serve garnished with cilantro or parsley or both.

  • The reason why I cook the chickpeas separately at the beginning because my chickpeas cook fast and I donโ€™t want to overcook it.
