Nutella Crinkle Cookies


I had to bake crinkle cookies for the whole week until I came up with this wonderful recipe. The total time for this recipe did not include chilling time.
With the snowy white appearance, these Nutella crinkle cookies are a must try!

Ingredients

  • 1/2 cup Nutella
  • 1/4 cup cocoa powder
  • 1/4 cup granulated sugar
  • 1 1/2 cups all purpose flour
  • 1/4 cup unsalted butter at room temperature(1/2 stick)
  • 2 tbsp whole milk
  • 1 tsp baking powder
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 eggs
  • 1 tsp instant Espresso powder

For rolling

  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar

Instructions

  1.  In a large bowl, mix together, butter, nutella, milk, cocoa powder, sugar, instant coffee and vanilla extract. You can use a stand mixer fitted with a paddle attachment or simply use a wooden spoon. Mix for 2 or 3 minutes or until all the ingredients are well incorporated.
  2. Add in the eggs one by one and make sure to mix between each egg until the mixture is smooth.
  3. Sift in flour along with cornstarch and baking powder. Add salt and mix to combine.
  4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or put in the freezer for about ยฝ hour or until firm.
  5.  Form walnut size balls, using a small ice cream scoop, then shape the balls well with hands.
  6. Roll dough balls in granulated sugar, then in powdered sugar to coat.
  7. Place the dough balls in a baking sheet covered with parchment paper.
  8.  Bake in a 350ยฐF preheated oven for about 12 to 15 minutes. The cookies will crack on the surface and that makes them great with powdered sugar between the cracks.
  9. 9- Let cool, then serve.

 

Heavenly Peanut Butter Blossoms


This recipe makes about 38 cookies depending on the size of the cookies. Peanut butter blossoms can be ready in 25 minutes, however I preferred to chill the dough for minimum 1 hour. So, the total time in this recipe did not include chilling time.

With Hersheyโ€™s chocolate kisses sitting on top of each cookie, these melt in your mouth Peanut butter blossoms are excellent!

Ingredients

  • ยพ cup creamy peanut butter(or crunchy if preferred)
  • ยฝ cup unsalted butter at room temperature(1 stick butter)
  • ยผ cup granulated sugar
  • ยผ cup brown sugar
  • 1 egg
  • 1 ยฝ cups all purpose flour
  • 2 tbsp milk
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 24 Hersheyโ€™s kisses milk chocolate(or other flavor), unwrapped
  • Pinch of salt
  • ยฝ cup granulated sugar for rolling

Instructions

  1. Cream together butter, peanut butter and sugars until smooth.
  2. Add in egg, vanilla and milk, then mix until well combined.
  3. Pour in the sifted flour along with the pinch of salt and baking soda.
  4. Mix until well blended but not over mix. The dough should come together and does not stick to the bowl.
  5. Cover dough with plastic wrap and chill for minimum 1 hour.
  6. Preheat oven to 375ยฐF.
  7. Shape dough into 1 inch balls.
  8.  Roll the balls in granulated sugar to coat them well.
  9. Place dough balls in a baking sheet lined with parchment paper. Space the balls about 2 inches apart.

  10. Bake for 8 to 10 minutes.
  11. Immediately after taking out cookies from the oven, place a Hershey kiss in the center of each cookie by gently pressing it down until cookie starts to crack.
  12. Let cool.
