Vegetable Macédoine

Macedoine salad can be made of fruits or vegetables. The fruits or vegetables should be cut into Macedoine cut (diced into small cubes).

In this recipe, I will be using the frozen mixed vegetables. I will be adding potatoes, cut into small cubes (macedoine cut).

Usually the vegetables are cooked a l’Anglaise but I prefer to steam them, it’s easier and faster.

Ingredients

  • 2 medium potatoes
  • 2 cups frozen mixed vegetables
  • Salt to taste
  • Mayonnaise to taste
  • Few leaves of Iceberg lettuce for garnish (optional)

  • 1 Roma tomato for garnish (optional)

Instructions

  1. First, peel the potatoes.

  2. Cut them into macedoine cut or dice them small.

  3. Place in a steam basket.

  4. Gently rinse the frozen mixed vegetables to slightly defrost them.

  5. Place the mixed vegetables on top of the potatoes.

  6. Season the top vegetables with salt (no worries the salt will penetrate to the potatoes in the bottom of the basket).

  7. Place the steam basket over a pot of boiling water on medium heat.

  8. Cover the vegetables with a lid and let steam until tender (about 15 minutes or so).

  9. Dump the vegetables in a bowl. Let cool at room temperature for few minutes.

  10. Place them in the fridge for at least 30 minutes or until completely cooled.

  11. Add about 1 tablespoon Mayonnaise to bind the vegetables together.

  12. Serve as is or with lettuce around and more vegetables.

Recipe Notes

  • You can serve your Macedoine with boiled eggs on top.
  • If you chose to cook the vegetables a l’anglaise, cook them separately in salted water or together in order of firmness. Drain and place in ice cold water to stop the cooking and keep their color.
