Nutella Crinkle Cookies


I had to bake crinkle cookies for the whole week until I came up with this wonderful recipe. The total time for this recipe did not include chilling time.
With the snowy white appearance, these Nutella crinkle cookies are a must try!

Ingredients

  • 1/2 cup Nutella
  • 1/4 cup cocoa powder
  • 1/4 cup granulated sugar
  • 1 1/2 cups all purpose flour
  • 1/4 cup unsalted butter at room temperature(1/2 stick)
  • 2 tbsp whole milk
  • 1 tsp baking powder
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 eggs
  • 1 tsp instant Espresso powder

For rolling

  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar

Instructions

  1.  In a large bowl, mix together, butter, nutella, milk, cocoa powder, sugar, instant coffee and vanilla extract. You can use a stand mixer fitted with a paddle attachment or simply use a wooden spoon. Mix for 2 or 3 minutes or until all the ingredients are well incorporated.
  2. Add in the eggs one by one and make sure to mix between each egg until the mixture is smooth.
  3. Sift in flour along with cornstarch and baking powder. Add salt and mix to combine.
  4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or put in the freezer for about ½ hour or until firm.
  5.  Form walnut size balls, using a small ice cream scoop, then shape the balls well with hands.
  6. Roll dough balls in granulated sugar, then in powdered sugar to coat.
  7. Place the dough balls in a baking sheet covered with parchment paper.
  8.  Bake in a 350°F preheated oven for about 12 to 15 minutes. The cookies will crack on the surface and that makes them great with powdered sugar between the cracks.
  9. 9- Let cool, then serve.
