Ingredients

  • 4 eggs
  • 1 stick (1/2 cup) unsalted butter
  • 1 can (13.4 oz) Dulce de leche
  • Pinch of salt
  • 1/2 cup all purpose flour
  • 1/2 cup almond flour
  • 1 tbsp baking powder

Instructions

  1. First, separate egg whites from egg yolks.

  2. In the bowl of a stand mixer, whisk the egg whites until medium peaks form (start on low speed then increase the speed to medium). Set aside.

  3. In a bowl, put the egg yolks, salt, butter and Dulce de leche.

  4. Whisk everything well.

  5. Add all purpose flour, Almond flour and baking powder.

  6. Mix everything well until smooth.

  7. Gently fold in the egg whites to the batter.

  8. Pour the batter in a greased pan. I have used a 7 inch round springform pan.

  9. Bake in 340°F preheated oven for about 50 minutes (to 1 hour).

  10. Let cool before cutting.

Recipe Notes

  • If you use a larger baking pan, the baking time will be less.
  • You can dust the cake with powdered sugar if you like.
  • Don’t prick the center of the cake with a knife to check if it is cooked especially if you see that it is still jiggly. This will deflate the cake in the center,  that was my mistake!
  • I flipped the cake over but you don’t have to flip it over.
