Healthy Zucchini Soup

Ingredients

  • 3 medium zucchinis, halved lengthwise and cut in 1/2 or 1/4 pièces
  • 3 celery stalks, cut in half
  • 1 small potato, cut into big chunks
  • 1/2 medium onion, roughly cut
  • 3 cloves garlic, cut in half
  • 1 tbsp olive oil
  • 1/2 bunch parsley
  • 1/2 bunch cilantro
  • 2 bay leaves
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tsp ginger
  • 1/4 tsp turmeric
  • 1/4 tsp Ras Al Hanout spice
  • 1/2 tsp dried oregano
  • 3 pieces laughing cow or Swiss cheese

Instructions

  1. In a saucepan over medium heat, put olive oil.

  2. Add onion, garlic, salt, pepper, ginger, turmeric, Ras Al Hanout, and oregano.

  3. Let cook for about 2 minutes then add bay leaves, parsley, cilantro, zucchini, potato, and celery stalks.

  4. Let cook together for another 2 minutes then cover everything with boiled water.

  5. Let cook for 20 to 30 minutes or less.

  6. Take out the bay leaves and celery stalks then discard them.

  7. Puree the vegetables in a blender with the cheese.

  8. Serve with your favorite bread.
