Cream Cheese Filled Pumpkin Muffins

These cream cheese filled pumpkin muffins are all you need with your coffee.
They are delicious and easy to make.

Cream Cheese Filled Pumpkin Muffins

Ingredients

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • ½ cup milk
  • ½ cup vegetable oil
  • 3 eggs
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/4 tsp salt

For the cream cheese filling

  • 8 oz cream cheese softened at room temperature
  • ½ cup granulated sugar
  • 1 tsp vanilla

Instructions

  1. First, prepare the filling by whisking together the cream cheese, sugar and vanilla. Mix until well combined and set aside.

  2. In a bowl, whisk well the pumpkin puree and sugar.

  3.  Add in the oil and whisk until obtain a frothy mixture.

  4. Pour in the milk. Mix and add the eggs one by one. Make sure to mix well between each egg. Add salt and mix it.

  5. Add in the flour, pumpkin pie spice, baking soda and baking powder. Mix to combine(try not to over mix it).

  6.  Prepare muffin tins with paper baking cups

  7. Pour about 1 full tablespoon of pumpkin muffin batter into each muffin cup.

  8. Layer with 1 full teaspoon of cream cheese filling.

  9. Top the cream cheese filling with pumpkin muffin batter.

  10. You can add your favorite topping to your muffins before baking them. I have sprinkled some of my muffins with a mixture of brown sugar and cinnamon.

  11.  Bake at 350 °F preheated oven for about 20 to 25 minutes.

  12. Enjoy.
