Garlic Spaghetti Squash

This is one easy recipe to make if you roast the spaghetti squash ahead of time.
The roasted spaghetti squash does not have flavors by itself. Loading it with garlic and some spices, makes it delicious and most important Healthy!

Garlic Spaghetti Squash

Ingredients

  • About 4 cups spaghetti squash ( already cooked)
  • 8 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp butter, at room temperature
  • salt, pepper to taste
  • 1/2 tsp ginger powder
  • 1/2 tsp oregano
  • Grated Parmesan cheese (optional)

Instructions

  1. In a frying pan over medium heat put olive oil and butter.

  2. Add minced garlic.

  3. Season with salt, pepper, ginger and oregano.

  4. Sizzle the garlic for few minutes then add about 1/2 cup water and let it cook ( I like it cooked and not burned).

  5. Once the water is almost gone, add the spaghetti squash.

  6. Cook for about 3 to 4 minutes.

  7. Serve with grated Parmesan on top.

Roasted Spaghetti Squash

The spaghetti squash that I have used in this recipe was roasted for 45 Minutes at 400ยฐF and the strands came out Al dente. It is better to have an undercooked Spaghetti squash than an overcooked one.

Depending of your oven and the size of your spaghetti squash, the roasting time may differ.

You can check if the spaghetti squash is cooked by poking it with a knife or a fork. If the flesh is tender then the squash is ready.
Cut the tip top and bottom of the spaghetti squash then cut it in half lengthwise.
Scoop out the seeds and the stringy bits of flesh.
Season the inside of each half the squash with salt then place in a baking sheet cut side down.
Bake at 400ยฐF for 40 to 45 minutes.
Use a fork to scrape the strands and fluff them to look like spaghetti.

  • 1 small spaghetti squash
  • Salt to taste

Instructions

  1. Wash the spaghetti squash.

  2. Cut off the tip top and bottom of the spaghetti squash.

  3. Cut the spaghetti squash in half lengthwise.

  4. Scoop out the seeds and stringy bits of flesh.

  5. Season the inside of each halved squash with salt.

  6. Place the halved spaghetti squash cut side down in a baking sheet lined with parchment paper.

  7. Roast in a 400ยฐF preheated oven for 40 to 45 minutes or until tender. It is better to have an undercooked spaghetti squash than an overcooked one.

  8. Let it cool for 10 minutes.

  9. Use a fork to gently scrape the strands and fluff them. That makes them look like spaghetti.

  10. Use the spaghetti squash in any spaghetti pasta recipe or as desired.
