Lamb Liver in a sauce โ€“ Kebda Mchermla

Ingredients

  • 1 lb liver (lamb), cut into small pieces
  • 4 cloves garlic, minced
  • 1 medium tomato, grated
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp vinegar
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1/4 tsp caraway powder
  • 1/2 tsp ginger powder
  • About 1 cup hot water
  • 1 tbsp chopped parsley (optional)
  • 1 tbsp chopped cilantro (optional)
  • Harissa or crushed red pepper (optional)

Instructions

  1. In a saucepan over medium heat, put olive oil.

  2. Add minced garlic and stir for about a minute.

  3. Add tomato paste and stir for another minute.

  4. Add the grated tomato and cook for 1 to 2 minutes.

  5. Add liver, then season with salt, pepper, ginger, caraway and add paprika. If you like it spicy then add crushed red pepper or harissa (optional).

  6. Stir constantly for few minutes.

  7. Add hot water and let cook for about 10 minutes (or less) over medium low heat (donโ€™t over cook the liver).

  8. Add vinegar, parsley (optional) and cilantro (optional), mix it then turn off the heat.

  9. Serve with bread.

Eggless Almond Condensed Milk Cookies

Almond condensed milk cookies are eggless cookies that are soft and easy to make.

The dough in these cookies still soft even if it was chilled for 1 hour.
It is hard to roll out the soft dough and use cookie cutters unless we add more all purpose flour to it .

Since I want to use more almond flour than all purpose flour in this recipe, I find it easy to just shape the dough into small balls.
I made a batch of cookies by using the same ingredients as the ones in this recipe but different amounts. The ingredients that I have used for the cookies shown in the above picture are:
1/2 cup almond flour
1/2 cup sweetened condensed milk
1 cup all purpose flour
1/2 cup (1 stick) unsalted butter, at room temperature 
1 tbsp cornstarch

After the dough was chilled for 1 hour, it was easy to roll it out and use cookie cutters.
The cookies were baked at 350โ„‰  for about 10 to 12 minutes.
The result was excellent but I preferred using more almonds flour than all purpose flour, thatโ€™s how I came up with this wonderful recipe bellow.

Eggless Almond Condensed Milk Cookies

Ingredients

  • 1 cup almond flour
  • 1/2 cup sweetened condensed milk
  • 1/2 cup all purpose flour
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 2 tbsp cornstarch

Garnish (optional)

  • About 1/2 cup almond flour
  • About 1/2 cup chocolate sprinkles
  • About 1/4 cup condensed milk

Instructions

  1. In a bowl, mix the butter and condensed milk for few minutes.

  2. Add almond flour and mix it.

  3. Add the flour and cornstarch and mix everything together. The dough should be sticky.

  4. Cover with plastic wrap and refrigerate for about 1 hour.

  5. Form small balls with the dough.

  6. Place the balls of dough on a baking sheet lined with parchment paper.

  7. Bake at 350โ„‰ย preheated oven for 15 minutes

  8. Let cool for about 10 minutes.

  9. Brush the base of each 2 cookies with condensed milk.

  10. Assemble each 2 cookies together.

  11. Brush the assembled cookies around with condensed milk and roll in almond flour or chocolate sprinkles.

  12. Enjoy.

Recipe Notes

  • You can assemble the cookies with jam, Nutella,Peanut butter,…etc
  • You donโ€™t have to assemble each 2 cookies together. You can brush each cookie with condensed milk and roll it in almond flour, chocolate sprinkles, grounded pistachios,…etc
