Roast Chicken with Baby Brussels Sprouts and Potatoes

Ingredients

  • 1 small Chicken
  • 12 oz tender baby brussels
  • 6 medium red potatoes cut small
  • 1 chopped medium onion
  • 1 stick unsalted butter at room temperature
  • ยผ tsp ginger powder
  • ยผ tsp garlic powder
  • 1 full tsp paprika
  • salt, pepper to taste
  • 1 medium lemon
  • 4 to 5 cloves garlic in their skin
  • Olive oil
  • Water as needed
  • Kitchen Twine

Instructions

  1. First prepare the chicken by rubbing it with half lemon inside and out. Make sure to leave the chicken at room temperature 30 minutes before preparing it.
  2.  In a bowl mix ginger, paprika, garlic powder, salt, pepper and the softened butter.
  3. Make a paste and put most of it under chicken skin around breasts and legs, and rub the rest all over the chicken. That will help get it moist and tender. Sprinkle the cavity of the chicken with salt and pepper.
  4. Put the other half of a lemon inside the chicken.
  5. Tie together chicken legs with kitchen twine so that chicken will cook evenly. Cover and set aside
  6. Trim off the end of brussels sprouts and slice them in the middle lengthwise.
  7. Season with salt and pepper.
  8.  Drizzle with 2 to 3 tablespoons olive oil and set aside.
  9. Sautรฉ the onion in 2 tablespoons of olive oil, over medium high heat.
  10. Stir frequently. If the onion starts to stick to the pan, stir in some water (about ยผ cup).
  11. Season with salt and pepper to taste and cook for about 3 minutes or until the onion is golden brown.
  12.  Toss in brussels sprouts. Mix for about 3 to 4 minutes then take out of the heat and set aside.
  13. Drizzle olive oil in a roasting dish.
  14.  Lay brussels sprouts and onion, along with potatoes, single layered over the dish. Toss in garlic cloves.
  15. Put chicken on top of the vegetables in the middle. Make sure to tuck the wings under the chicken to avoid burning while roasting.
  16. Bake in a 425 ยฐF preheated oven for about 1 hour and 30 minutes or until the juices run clear when piercing. You may need to add in about ยผ cup or less of warm water if you feel that the vegetables may burn.
  17. Take out of oven and cover with aluminum foil.
  18. Let stand 15 minutes minimum before carving so the juices settle.
  19. Serve.

 

 

 

Easy Peanut Butter S’mores ๐Ÿ‡บ๐Ÿ‡ธ

Ingredients

  • 6 graham crackers
  • 3 big marshmallows
  • 6 tbsp creamy peanut butter
  • 3 tbsp chocolate chips
  • 1 tbsp heavy cream
  • 1 tbsp unsalted butter at room temperature

Instructions

No need of Campfire to make these sโ€™mores. We only need to use a microwave, so here is my recipe:

  1. Cut each marshmallow in half, using kitchen scissors. Set aside.
  2. Break each graham cracker rectangle in half (2 squares) and set aside.
  3. In a heat proof bowl, melt the chocolate with heavy cream by putting the bowl over a saucepan with simmering water, stirring occasionally. Once the chocolate has melted, add in the butter and take out the bowl from the heat. Keep mixing until obtain a nice shiny mixture. Set aside.
  4. Put on each graham cracker(6 squares), 1 halved marshmallow. Set aside.
  5. Spread peanut butter on the 6 remaining halved graham crackers(squares).
  6. Put the halved graham crackers topped with marshmallows in a plate and microwave for about 13 seconds, just enough for marshmallows to puff up.

  7. Assemble the marshmallow topped crackers with the peanut butter topped crackers. Gently press to adhere and obtain graham cracker sandwiches.
  8. Dip the cracker sandwiches in the melted chocolate. You can dip all the corners in the chocolate or just one side.
  9. Refrigerate for about 5 minutes until the chocolate cool and harden.
  10. Serve.
