Chocolate Lava Cakes

Chocolate lava cakes also known as Lava cakes or Molten chocolate cakes are fantastic desserts. They are incredibly easy to make and their taste is divine.
Prepare the cake batter.
Pour the batter in ramekins.
Bake in 425ยฐF preheated oven for 10 to 12 minutes or until the edges and tops are firm but the centers are still soft.
Run a knife around the edges of the cakes, then invert each cake on a plate. Dust with powdered sugar (optional) and enjoy.
The chocolate lava cake in the above photo was served after half an hour of taking it from the oven.

Ingredients

  • 1/2 cup (or 1 stick) unsalted butter, at room temperature plus 1/2 tbsp to grease the ramekins
  • 3/4 cup semisweet chocolate chips
  • 1/2 cup granulated sugar plus 4 tbsp to dust the ramekins
  • 4 eggs
  • 1/2 cup all purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp powdered sugar to be used for serving (optional)

Instructions

  1. Grease the ramekins with butter and dust with granulated sugar. This ensure that the cakes come out of ramekins easily when inverted onto plates. Set aside.

  2. Put the chocolate and butter in a heatproof bowl.

  3. Place the bowl over a saucepan of simmering water and let the chocolate and butter melt. Stir occasionally.

  4. Let the chocolate mixture cool.

  5. In the bowl of a stand mixer, whisk the eggs, salt, sugar and vanilla extract until doubled in volume and the egg mixture become pale.

  6. Pour the egg mixture over the chocolate and add the flour.

  7. Gently mix everything until well combined.

  8. Pour the chocolate batter in the ramekins and place the ramekins on a baking sheet.

  9. Bake in 425ยฐF preheated oven for 10 to 12 minutes or until the edges and tops are firm but the centers are still soft.

  10. Wait 1 to 2 minutes, then run a knife around the edges of the cakes, then invert each cake on a plate.

  11. Dust with powdered sugar (optional) and serve immediately.

Recipe Notes

  • You can serve these cakes with ice cream, with fruits, chocolate sauce, you name it!

Almond Pound Cake

Pound cake is originally from Great Britain. It is traditionally prepared with a pound of each of these ingredients: flour, sugar, eggs, and butter.

There are several variations on the traditional pound cake, depending on the country or region. In France the pound cake is called โ€œQuatre Quartsโ€. In Mexico it is called โ€œpanquรฉโ€.

We are obviously not tight to use a pound of the above cited ingredients, as everyone adjust the amount of the ingredients to their liking. I chose to reduce butter and add almond flour. I use US cups as a measuring cup in this recipe ( not โ€œa poundโ€).

My Pound cake came out moist, buttery and it is definitely a winner. It can be served dusted with powdered sugar, with a glaze or with a coat of icing.

Pour the batter in a lightly buttered loaf pan ( I have used an 8×4 inch loaf pan).
Bake in a 350ยฐF preheated oven for about 50 minutes or until a knife inserted in the center comes out clean. Let cool then dust the cake with powdered sugar (optional).

Ingredients

  • 1 cup almond flour
  • 1 cup all purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsalted butter, at room temperature plus 1 tbsp to grease the pan
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1 tbsp powdered sugar to dust the cake ( optional)

Instructions

  1. In the bowl of a stand mixer, whisk the butter and sugar until creamy.

  2. Add eggs, vanilla extract, milk and salt. Whisk everything together until smooth.

  3. In a separate bowl, sift the almond flour, all purpose flour, baking soda and baking powder. Mix everything with a spoon.

  4. Pour the flour mixture in the bowl of a stand mixer. Mix with a wooden spoon until well incorporated.

  5. Pour the batter in a slightly buttered loaf pan (I have used an 8 x 4 inch loaf pan).

  6. Bake in a 350ยฐF preheated oven for about 50 minutes or until a knife inserted in the center, comes out clean. Let cool.

  7. Dust the cake with powdered sugar (optional).
