Ingredients

  • 1 lb ziti pasta
  • 1 tbsp unsalted butter at room temperature
  • ยผ cup grated parmesan cheese

For Arrabbiata sauce

  • 4 tomatoes
  • 4 cloves garlic
  • ยฝ cup chopped cilantro
  • 1 tsp red pepper flakes
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt, pepper to taste

Instructions

  1. Cook pasta according to package directions.
  2. Put the tomatoes in a saucepan, cover them with water and place the saucepan over medium heat.
  3. Bring water to boil, and let cook for 2 minutes; that makes it easy to peel off the tomatoes.
  4. Peel off the tomatoes and cut them small. Set aside.
  5. Prepare the arrabbiata sauce, Put olive oil in a saucepan, over medium high heat and sautรฉ the garlic and red pepper flakes, for about 2 minutes or may be less.
  6. Once the garlic starts to golden , add in the tomatoes.
  7. Season with salt and pepper. Add paprika, stirring frequently.
  8. Let simmer for about 10 minutes then add cilantro. Turn off the heat and set aside.
  9. Once the pasta is cooked, drain it and stir in the butter until it melts.
  10.  Pour pasta over arrabbiata sauce, mix them well.
  11. Serve pasta with grated parmesan on top.
  12. Enjoy.

Baked Chicken with Mustard Sauce

Ingredients

  • 8 pieces chicken
  • 3 to 4 tbsp extra virgin olive oil

For the mustard sauce

  • ยฝ cup dijon mustard
  • 2 tbsp honey
  • 1 tsp apple cider vinegar
  • 3 tbsp chopped cilantro(optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • ยผ tsp onion powder
  • ยผ tsp garlic powder
  • ยผ tsp ginger powder

Instructions

The total time given in this recipe did not include the marination time. It would be better to marinate the chicken overnight.

  1. Preheat oven to 450ยฐF.
  2. Prepare the mustard sauce by mixing all the ingredients.
  3. Prepare the chicken for marination. Make 2 to 3 slashes with a knife in the chicken, that will make the marinade get deeper into the chicken.
  4. Marinate the chicken in the mustard sauce and refrigerate for 3 hours minimum, preferably if prepared overnight.
  5. Place chicken in a non stick baking dish, drizzle with olive oil.
  6.  Bake for about 45 minutes.
  7.  Serve with the mustard sauce. You can use the sauce as it is or put it in saucepan and simmer it until it is reduced. This chicken can be served with rice, mashed potatoes or other.
