Pumpkin Mixed Nuts Cookies

Ingredients

  • 1 stick unsalted butter softened at room temperature
  • ยฝ cup vegetable oil
  • 1 cup pumpkin puree
  • ยพ cup powdered sugar plus extra for garnishing
  • ยฝ cup finely chopped mixed nuts (pistachios. Pecans, almonds, peanuts)
  • 2 cups all purpose flour
  • 1 egg
  • Pinch of salt
  • 1 tsp baking powder
  • ยฝ tsp baking soda
  • ยฝ tsp pumpkin pie spice

Instructions

These cookies don't have too much sugar, but by rolling them in the powdered sugar or simply sprinkling them with it, they will taste just right. They are soft, fluffy with healthy nuts. The nuts can be chopped finely or coarsely, it's really a personal choice. Trust me; these cookies are a must make!

  1. Preheat oven to 350 ยฐF.
  2. In a bowl, cream together the butter, oil, powdered sugar, pumpkin puree, salt and pumpkin spice.

  3.  Add in the egg and mix well.
  4. Toss in the nuts.
  5. Sift in the flour, baking powder and baking soda. Mix to combine. The batter should be very soft.
  6.  Scoop the dough (using an ice cream scoop) into 1 inch balls, directly to a baking sheet, covered with parchment paper.
  7. Adjust the shape of the scooped dough with your fingers.
  8.  Bake for 10 to 15 minutes or until golden.
  9. Let cool for 5 minutes.
  10.  Sprinkle the cookies with powdered sugar(You can roll them in powdered sugar if you like).
  11.  Enjoy!

Cream Cheese Filled Pumpkin Muffins

These cream cheese filled pumpkin muffins are all you need with your coffee.
They are delicious and easy to make.

Cream Cheese Filled Pumpkin Muffins

Ingredients

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • ยฝ cup milk
  • ยฝ cup vegetable oil
  • 3 eggs
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/4 tsp salt

For the cream cheese filling

  • 8 oz cream cheese softened at room temperature
  • ยฝ cup granulated sugar
  • 1 tsp vanilla

Instructions

  1. First, prepare the filling by whisking together the cream cheese, sugar and vanilla. Mix until well combined and set aside.

  2. In a bowl, whisk well the pumpkin puree and sugar.

  3. ย Add in the oil andย whisk until obtain a frothy mixture.

  4. Pour in the milk. Mix and add the eggs one by one. Make sure to mix well between each egg. Add salt and mix it.

  5. Add in the flour, pumpkin pie spice, baking soda and baking powder. Mix to combine(try not to over mix it).

  6. ย Prepare muffin tins with paper baking cups

  7. Pour about 1 full tablespoon of pumpkin muffin batter into each muffin cup.

  8. Layer with 1 full teaspoon of cream cheese filling.

  9. Top the cream cheese filling with pumpkin muffin batter.

  10. You can add your favorite topping to your muffins before baking them. I have sprinkled some of my muffins with a mixture of brown sugar and cinnamon.

  11. ย Bake at 350 ยฐF preheated oven for about 20 to 25 minutes.

  12. Enjoy.
