๐Ÿ‡ฉ๐Ÿ‡ฟ Whole wheat, Chickpea and Lentil Flour – Rwina

Rwina also spelled Rouina- Arabic ุงู„ุฑูˆูŠู†ุฉ is a flour that is basically made of whole wheat. The whole wheat is washed, drained and roasted, then grinded. Other ingredients can be added to the whole wheat to make the flour richer such as chickpeas and lentils. There are several types of Rwina in Algeria and the recipe that I am sharing today is made of whole wheat, chickpeas and lentils.
This healthy flour is used in several recipes that I will be sharing very soon.

Ingredients

  • 2 cups whole wheat
  • 2/3 cup chickpeas
  • 1/3 cup brown lentils
  • 1 tsp salt

Instructions

  1. First of all, put the whole wheat in a large plater and check it for any pieces of debris that they might have.

  2. Wash the whole wheat under running water in the sink.

  3. Drain and let it air dry for few minutes.

  4. Wash the chickpeas, drain and set aside.

  5. Wash the lentils, drain and set aside.

  6. Start roasting the whole wheat in a cast iron pan over medium low heat.

  7. Make sure to stir frequently during the roasting process.

  8. Once the whole wheat is golden, place it in a bowl( it took me 15 minutes to roast 2 cups of whole wheat).

  9. In the same cast iron pan, roast the chickpeas until slightly golden.

  10. Add the chickpeas to the roasted whole wheat in the bowl.

  11. Finally roast the lentils for few minutes until they get golden brown and add them to the chickpeas and whole wheat.

  12. Put everything in a blender and process for few minutes, just to break down the ingredients especially the chickpeas.

  13. Now use a coffee or spice grinder and start grinding the mixture in small amounts until obtain a flour like texture.

  14. Sift the flour and discard the course grains.

  15. Add about 1 teaspoon fine salt and mix well.

  16. Place the flour in an airtight container and reserve until ready to use.

Recipe Notes

  • You can add the salt before grinding everything.
  • You can grind your roasted ingredients into your desirable texture.

Grilled Gouda Cheese Sandwich with Peppers and Caramelized Onions

Grilled cheese sandwich is one of the sandwiches I can make when I donโ€™t have no idea what to eat. Adding Caramelized onions and peppers take the sandwich to the next level. The melted Gouda cheese, the sweetness of the onions and bell peppers along with a little spiciness of Anaheim pepper make this sandwich Deluxe!

Itโ€™s is better to make ahead of time the Caramelized onions and the baked peppers. I like the long bell peppers but you can use any type of peppers.

Grilled Gouda Cheese Sandwich with Peppers and Caramelized Onions

Ingredients

  • 2 slices of bread (any type)
  • 2 tbsp Caramelized onions
  • 2 long red bell peppers (any color will do)
  • 2 Anaheim peppers
  • Salt to taste
  • 1 tbsp olive oil
  • 3 to 6 tbsp grated Gouda cheese
  • 1 to 2 tbsp spreadable butter

Instructions

  1. First, prepare ahead of time the peppers.

  2. Wash the peppers and dry them with paper towel.

  3. Place the peppers in a baking sheet.

  4. Bake in a 400ยฐF preheated oven for 15 to 20 minutes ( it may take longer if you have more peppers). Make sure to flip them over after the first 10 minutes of baking.

  5. Peel off the outer skin.

  6. Remove the seeds and internal ribs.

  7. Cut the peppers lengthwise into strips.

  8. Place in a bowl and season with salt.

  9. Add olive oil (1 tablespoon or more). Set aside.

  10. Prepare ahead of time the Caramelized onions, please see recipe link above.

  11. Grate the Gouda cheese.

  12. Now letโ€™s assemble the sandwich.

  13. Place a cast iron pan over medium heat.

  14. Spread the butter on one side of each slice of bread.

  15. Place each slice of bread on the cast iron pan ( butter side down)

  16. Layer both slices of bread with the grated Gouda cheese( as much as you want).

  17. Top the first slice with Caramelized onions and the second one with baked peppers.

  18. Top both slices again with more grated Gouda cheese.

  19. Using a spatula, gently place one loaded slice of bread on top of the other to sandwich it.

  20. Gently press on top with a spatula for a minute or less.

  21. Flip the sandwich over and let grill until golden brown.

  22. Place in a plate and enjoy.

Recipe Notes

  • Note that I didnโ€™t use all the peppers in the sandwich. You can eat the left over peppers as a salad or keep in the fridge for your next sandwiches.
