Gingerbread Men Cookies

These holiday cookies are fragrant with ground ginger, cinnamon, cloves, nutmeg and molasses.

They are great cookies for kids to decorate. They are soft, tasty and super easy to make.

Ingredients

  • 3 cups all purpose flour
  • 3/4 cup unsalted butter, at room temperature
  • 1/2 cup packed brown sugar
  • 1/2 cup molasses
  • 3/4 tsp baking soda
  • 1 tsp ginger powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/8 tsp ground cloves
  • 1 egg

Instructions

  1. In the bowl of a stand mixer, put butter, brown sugar, molasses, ginger, cinnamon, nutmeg, ground cloves and salt.

  2. Cream everything together until smooth.

  3. Add the egg and whisk more.

  4. Sift in the flour and baking soda, then mix with a wooden spoon.

  5. Get your hand in the dough and gently mix it and form a ball.

  6. Cover with plastic wrap and refrigerate for about 1 hour.

  7. In a slightly floured working board, roll out the dough to about 1/8 inch thick.

  8. Use a gingerbread man cookie cutter to cut out the dough.

  9. Place the cut out pieces in a non stick baking sheet.

  10. Bake in a 350ยฐF preheated oven for about 8 to 10 minutes.

  11. Let cool completely.

  12. Decorate the gingerbread men cookies as you like them, with sugar icing, royal icing, chocolate, you name it.

Recipe Notes

  • In this recipe, I have used sugar icing ( powdered sugar plus water) and m&ms to decorate the gingerbread men.

Algerian Toasted Semolina with Butter and Honey – Tamina

The Algerian toasted semolina with butter and Honey called Tamina is a dessert usually prepared for the celebration of the the prophet Mohamedโ€™s birthday (or Al Mawlid Anabawi  Acharif) in the Algerian culture.

Tamina is also prepared for the mothers who had babies and it is served for their guests for the same occasion.

Tamina requires 3 basic ingredients such as 1 measurement toasted semolina, 1/2 measurement butter, 1/2 measurement honey. The decoration is optional, it can be cinnamon, nuts, m&ms, and you name it.

Ingredients

  • 1 cup medium semolina
  • 1/2 cup honey
  • 1/2 cup butter at room temperature

Garnish

  • Cinnamon
  • Nuts, M&Mโ€™s or any other type of candies (optional).

Instructions

  1. First, place a cheesecloth in the top of a steamer.

  2. Pour semolina on the cheesecloth.

  3. Place the top of the steamer with semolina on a pot of boiling water.

  4. Let the semolina steam for about 15 minutes.

  5. Pour the steamed semolina in a large shallow dish and let cool.

  6. Pour the steamed semolina in a large frying pan, over medium low heat.

  7. Toast semolina until it gets that golden color. Set aside.

  8. Place butter in a saucepan over medium heat and let it melt.

  9. Add honey to the butter and let it just warm up ( not boil).

  10. Turn off the heat.

  11. Pour toasted semolina and mix it well.

  12. Let set for about 5 minutes.

  13. You will notice butter on top, mix it again and pour it in a serving plate.

  14. Take a cookie cutter of your choice and dip it in the Tamina, then place the cookie cutter in another plate containing cinnamon.

  15. Stamp the Tamina with the cookie cutter (with cinnamon).

  16. Decorate with nuts, candies or anything you like (optional).

Recipe Notes

  • Several recipes donโ€™t require the steaming of semolina but I recommend doing it for safety ( in case the semolina is not well toasted but it was steamed, itโ€™s safe to eat it).
