Ingredients

  • 1 cup mashed bananas (about 2 ripe bananas)
  • 3/4 cup all purpose flour
  • 1/2 cup almond flour
  • 1/2 cup vegetable oil
  • 1/2 cup light brown sugar
  • 1 cup semisweet chocolate chips
  • 2 eggs
  • 3 tbsp cocoa powder
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, sift the flour, almond flour, salt, baking soda, baking powder and cocoa powder. Mix them well with a spoon. Set aside.

  2. In the bowl of a stand mixer, whisk the eggs, oil, sugar and vanilla until the mixture thickens.

  3. Add the flour mixture and mix just to combine with a wooden spoon.

  4. Fold in 3/4 cup of the chocolate chips.

  5. Pour the batter in a slightly greased 9x5 inch loaf pan.

  6. Sprinkle the rest of chocolate chips on top.

  7. Bake in a 350°F preheated oven for 45 to 50 minutes.
