Yule Log, French buche de Noel

Preparation time: 20 mn

Total time: 1 hour and 20 mn
Serve: 6 persons

Ingredients for the genoise or sponge cake
4 eggs
8 Ts granulated sugar
1 paquet vanilla sugar
3.5 Ts flour
3.5 Ts cornstarsh
½ paquet baking powder

For the sirop
½ cup of granulated sugar
1 cup of water

For the chocolate Ganache
chocolate
¼ cup heavy cream

Preparation
1- First we start with the sirop. Mix water and sugar, put to boil than lower the heat and let simmer for 15 mn. Take off the heat and let cool.
2- For the genoise, separate the egg whites from the yolks.
3- In a bowl mix the egg yolk with sugar and vanilla powder until the bater is blanchis.
4- Add flour, cornstarsh and baking powder, mix gently. Set aside.
5- In another bowl, mix well the egg white until obtain sort of meringue.
6- Incorporate the egg white to the first bater gently with a spoon.
7- Preheat oven to 400F.
8- Cover a pan with parshment paper. Butter and flour the parshment paper and pour in the mixter.
9- Bake for about 8 to 10 mn or until golden.
10- In meanwhile, prepare the ganache in a bain marie or water bath. Mix well the Ganache ingredients until you obtain a great shiny mixter. Set aside.
11- Once the genoise is baked , put it on another parshment paper. Remove top sheet.
12- Put the sirop on the surface of the genoise , using a kitchen brush.
13- Spread half the chocolate ganache over the genoise.
14- Roll the genoise gently in order to obtain a log.
15- Spread the rest of the chocolate ganache on top of the log.
16- Refrigerate before serving.
