First separate the egg whites from the yolks.

In a bowl, cream together the egg yolks and sugar.

Add in the cream cheese, vanilla, lemon zest and mix them well until smooth.

Sift in the flour and baking powder, mix just to combine then set aside.

In another bowl whisk the egg whites with the pinch of salt until stiff peaks form.

Gently fold in the egg whites into the egg yolk batter until it is well combined.

Take a small portion of the batter, using a tablespoon, and gently slide the batter with your finger to deep fry it.

Fry the beignets in both sides for about 2 minutes or until golden.

Drain the beignets on a paper towel, then dust with powdered sugar.
