Chop onions and garlic (the size does not matter as it will be blended later).

Put olive oil in a saucepan and place over medium high heat.

Toss in onions and garlic and cook stirring for about 2 to 3 minutes until vegetables are slightly brown.

Add in zucchinis, parsley, cilantro, ginger powder and season with salt and pepper, then cover the vegetables with water (just enough to cover the vegetables).

Bring water to a boil then reduce heat to medium low and let cook.

Once the vegetables are cooked, add in the cheese.

Use an immersion blender and blend until smooth.
