Turkish Semolina cookies, Sekerpare

Preparation time: 20 mn

Cook time: 20 mn

Total time: 40 mn

2 eggs

1 and ½ stick unsalted butter at room temperature

1 cup granulated sugar

4Ts full somolina

2Ts full coconut powder

3 to 4 cups flour1Ts vanilla powder

1 ts baking powder

3 cups sugar

4 cups water

Juice of 1 lemon

1 egg yolk

2 to 3 drops water

Few almonds for decorations or peanuts

Sekerpare means “a piece of sweet” in Turkish. My Turkish friend passed me this recipe, very easy and tasty.

1- First we prepare the sirop by putting all the ingredients in a pan to boil. Let simmer for 5 mn, then turn off the heat and let cool.

2- In a large bowl, put the sugar, coconut and the softened butter.

3- Mix well with the spoon or the electric beater, then add the eggs one by one. Keep mixing.

4- Add the remaining ingredients. This time mix with spoon or use your hands. You may add flour if necessary.

5- Form small balls, the sise of walnut and put them in a non stick baking tray with high edges.

Make sure to leave enough space in the baking tray, as they expand during baking.

6- Make a little hole in the middle of each dough ball to put or push in the almond.

Repeat the operation for all the dough balls.

7- Mix the egg yolk with 2 to 3 drops of water, then brush the cookies with the egg mixter.

8- Preheat oven to 350 degres F, and bake the cookies for about 30 to 40 mn or until golden brown.

9- Pour the sirop on all the cookies, and let them absorb the sirop.

10- Let cool
