Beef and Vegetable Frittata

Ingredients
3 green onions
2 cloves garlic
2 medium tomatoes
1 lb mushrooms
1 lb ground broccoli
½ lb ground beef
5 eggs
1 small yellow bell pepper
1 small green bell pepper
1 small red bell pepper
1 Ts paprika
½ ts black pepper
4 Ts olive oil
Salt

Preparation
This recipe below, is one of the diverse recipes of a Frittata.
1- Put about 2Ts of olive oil in a pan over medium heat, cook the seasoned ground beef for 3 to 4 minutes. Set aside.
2- Put 2Ts of olive oil in another pan.
3- Sauté all the vegetables starting with the longer cooking veggies and ending with the softer cooking ones.
4- Season the vegetables with salt to taste, black pepper and paprika.
5- Let it cook for a minute; stirring occasionally, then add in the ground beef.
6- Beat the seasoned eggs and pour them in the pan.
7- Tilt the pan to make sure the eggs settle evenly.
8- Cook for a minute or two then turn off the heat and transfer the pan to the oven.
9- Bake in a preheated oven for about 30mn.
10- Let cool for about 5 mn before slicing.
11- Serve.

Lebanese rice- Rice with vermicelli

Ingredients
2 cups Basmati rice
¾ cup vermicelli
1ts salt
½ stick unsalted butter at room temperature
2 ¾ cups water + more for soaking and rincing the rice

Preparation
1- Soak the rice in hot water for about 15 mn. The water should completely cover the rice.
2- After that time, rinse the rice with cold water until you get rid of the excess starsh. Drain and set aside.
3- In a non stick pan over medium heat, melt the butter.
4- Toss the vermicelli in the butter and continuously stir to toast it evenly until obtain golden brown color.
5- Once the vermicelli is golden, take it out of the stove . Pour 1 cup of cold water to stop the cooking.
6-Add 1 ¾ cup water to the vermicelli and put the pan in the stove over medium heat.
7- Add in the rice and salt to the vermicelli and stir.
8- Bring to boil
9- Reduce the heat to low and let simmer for about 15mn.
10- Check on the rice, the rice should absorb all the water.
11-Turn off the heat and put the pan aside for minimum 10 mn before serving.
12- Put the rice in a serving dish, sprinkle cilantro on top(optional).
