Easy and Soft Snickerdoodles

Ingredients

  • ½ cup (1 stick) unsalted butter
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 tsp cream of tartar
  • ½ tsp baking soda
  • 1 1/2 cup all purpose flour
  • 1 tsp vanilla extract
  • Pinch of salt

For rolling

  • 4 tbsp granulated sugar
  • 1 full tsp cinnamon powder

Instructions

  1. In a bowl, mix the dry ingredients such as flour, salt, cream of tartar and baking soda. Set aside.
  2.  In another bowl, whisk together butter and sugar until creamy and smooth.
  3. Add in the egg and vanilla and whisk well.
  4. Pour in the dry ingredients and mix to combine.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or until dough is firm.
  6. Preheat oven to 350°F.
  7. In another bowl mix the ingredients for rolling and set aside
  8. Use a small ice cream scoop to shape small balls of dough or you can use a spoon for that.
  9.  Roll the balls of dough in the cinnamon sugar mixture to coat.
  10. Place balls in a baking sheet covered with parchment paper. Make sure to leave about 2 inches space between the balls, as they will expand.
  11. Bake for about 10 minutes.
  12.  Let cool.
